Reports to The Director

Responsibilities

Business Revenue Growth

  • Submit monthly branch performance report and give recommendations
  • You will lead in upselling and revival of any lost
  • Must have solid information on what is happening around you in terms of business and competition
  • Give recommendations, evaluations of what needs to be improved to for us to remain competitive and above the cutting edge
  • Take necessary steps to ensure that the restaurant gains profitability

Staffing

  • Conduct shift meetings with staff at the beginning of each shift
  • Branch staffing analysis
  • Prepare and maintain the weekly work schedule for all staff in the assigned unit
  • Assist the HR in continuous and quarterly performance evaluations for staff
  • In liaison with the Human Resource department ensure proper staffing in the assigned unit
  • Training Needs Analysis

Restaurant Operations

Customer Service/ quality assurance

  • Responsible for maintaining high standards of excellence and raise our operations minimum score
  • Ensure all the products are of acceptable standard i.e daily routine check of product shelf life
  • Maintain a clean work environment with high health and safety standards always
  • Build customer relations, get to know more about your frequent clients, build rapport with them. Walk round all client tables not unless you are extremely busy and have a word or two with the clients.

Stock Management

  • Taking stocks daily and ensure all stock movements are entered into the system, this includes branch requisitions

Facility Safety Management

  • Keep check of the restaurant maintenance, anything broken or that needs maintenance
  • Ensure safe custody of all branch property and assets

Inventory Control

  • Monitor crockery and report consistently on any breakages or losses
  • Handling the set weekly inventory stock takes

Ensure Bar Controls

  • Drinks controls ensuring our quality and standards are maintained.
  • Strict use of recipes must be adhered to.

Qualifications

  • Diploma or Degree in Hotel Management, Culinary Arts or related field from a recognized Institution
  • Must be computer literate
  • 3-5 years’ experience in Food and Beverage service with a managerial experience of not less than 2 years;
  • Highly conversant with HACCP regulations as well as safety policies
  • Knowledge in budgeting, forecasting and management of costs
  • Be conversant with advanced principles of food and beverage management, revenue management and cost control.
  • Communication and leadership skills
  • Ability to manage personnel and meet financial targets
  • Guest-oriented and service-minded
