Duma Works is is looking for a Head chef for one of its client a leading hotel in Diani An enthusiastic Head Chef with over 5 years’ experience to lead our positive and hardworking kitchen team that at the moment requires someone who can take them to the next level!
We are a small hotel with 15 rooms that offer our guests fresh fantastic three course meals for lunch and dinner after a set menu. We are using locally produced groceries, mainly fish and seafood on the menu and over all a simple but fantastic culinary experience!
Our main clientele is 50% Scandinavians and 50% mixed nationalities therefore to have experience from cooking international cuisine is needed.
Head Chef Job Responsibilities
- Controls the whole kitchen, making sure all routines set by management are followed
- Managing kitchen staff for skills, motivation
- Quality check and responsible for what comes into the stores and kitchen
- Controlling kitchen costs
- Coming up with ideas and creating the menus
- Preparations, plating and food control .
- Evaluation of junior staff performance
- Responsible for Equipment stores and inventory of stores
- Making of weekly schedules
- Working close together with the Kitchen Supervising chefs
- Reporting to the General Manager
- Ensure proper management of management of equipment, utensils, and supplies.
- Prepare departmental budget.
- Coach mentor and perform regular performance appraisal for departmental staff.
- Allocate duties: schedule all staff leave, time-offs and keep records of the same in the department.
- Ensure proper maintenance of cleanliness and hygiene standards in the department as per company requirement.
- And any other duties assigned by the supervisor.
